Guest Post! The Mrs Makes Carrot Cake

Well, you know, this blogging community thing has kind of got me thinking. I should be more inclusive. Be part of the action. Get out of my ivory tower. It’s all me, me , me. All that jazz. So for this post I sat on my arse and took photos whilst the Mrs made a cake. What fun!

My wife was an excellent cook. She really was. Then I discovered Decided I was going to start a food blog. She hardly gets in the kitchen anymore. I am a food freak.

However in the interest of sex equality this post is entirely none of my doing.


The Invisible Man had a hand in grating the carrot…

Carrot Cake Ingredients

For the carrot cake

  • 8fl oz vegetable oil
  • 7oz plain flour
  • 1 tsp bicarbonate of soda
  • 12oz sugar
  • 3 eggs
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • 1½ tsp mixed spice
  • 4 carrots, grated
  • 3oz walnuts, chopped

For the icing

  • 6oz cream cheese
  • 5½oz caster sugar
  • 1 orange, zest and juice
  • 3½oz butter, softened

First gather your ingredients:


Prepare a loaf tin by lining it with buttered greaseproof paper:


Turn on the oven:


Begin combining the cake ingredients in a bowl. The wine is not an ingredient.


Add the carrots whilst husband hangs around taking photos. Normal right? I mean taking pictures of your wife stirring grated carrots in a bowl?


Stop laughing! Carrot cake is a serious business.


Sift in the flour and combine:


Pour the mixture into the tin:


Bake in the oven at 180 centigrade for 20 to 30 minutes:


It’s ready when a skewer stuck into it comes out clean:


Remove cake from tin and leave to cool:


Meanwhile prepare the icing. Simply combine the ingredients in a bowl:


Spread the icing over the cooled cake:


Now this creation headed off to the wife’s workplace; there seem to be a lot of bake sales going on at work at the moment – in my place we had an email about healthy eating from HR followed by one about cake sales in the cafe. Talk about contradictory messaging!


Anyway I have to do the washing up now.

  1. I love carrot cake & my favorite kind is the kind where someone else makes it for me. You wife is absolutely lovely & if I could get my husband to start a food blog & push me out of the kitchen, I’d be smiling too. Could you maybe send him an email about how exciting & fun cooking & blogging about it is. He’s thinking of retiring next year & I think he needs a hobby.

    • Here’s the thing – I generally find food blogging quite stressful unless I’m drinking wine. I long for retirement but only from the perspective of not having to get up at 6.05am 5 days a week. Let him get bored then suggest the food thing!

      • I’ve been finding blogging not only stressful but just about impossible. Our old computer finally kicked the bucket & the new one came pre-loaded with Windows 8. Now THAT I wouldn’t wish on anyone. Just as I was about to toss it out front for use as a lawn ornament, the store said they’d had so many problems that they’re ordering us a new computer & checking it out before we take it. Turns out they sent a bunch of them out with Java that had a known virus also pre-loaded.

          • I hope you had a great birthday weekend. Just now got the replacement computer back & the store was terrific – they took all the ads & junk off for us, set up the Windows Office, put our McAfee on & so far I’m keeping my fingers crossed because I haven’t been bounced off the internet yet. I’d say do anything to hang on until they’ve got some of their bugs worked out or go with Apple because this system…errrgggg!
