Corned Beef Pie

Earlier this year we attended my wife’s sister’s wedding reception. Now this was no ordinary event; themed as a tea party it was a nostalgic affair, including cream teas (I will do one of those one day) and decor that whisked us back to a bygone era when England punched way above its weight, and, as they say, ruled the waves.

The fussy eater came with us (the older child was somewhere else; teenagers. Nuff said). As we sipped tea from china cups, and nibbled scones with strawberry jam and cucumber sandwiches, out came several enormous pies.

Now my laser-like food sensors immediately indicated that these pies might be an interesting proposition. So I was at the table they were being placed on before they had arrived.

Corned Beef Pies. Big ones. A took a large slice for me and one for the fussy eater. He liked it that much we conspired to recreate this creation at home.

Now in the UK corned beef is not the same as corned beef as it is in the States. Over there it appears to be more like salted beef. I mean it looks like beef. Over here it comes in tins (from Argentina usually) and has the consistency of lumpy pate.

Not that it matters. This is a) Easy and b) Delicious. And that, oh wonderful readers, is all that matters. Everything else is flim-flammery.

Pate aux pommes de terre

Sounds fancy? Well it isn’t! It’s Potato Pie by any other name. You could call it Potato en Croute. French is a very useful language. Something that sounds ‘run-of-the-mill’ or ‘middle-of-the-road’ can sound much better in French. But there is nothing boring about this recipe.

In fact Il n’y a rien de banal dans ce qu’on propose. And no I cannot speak French, this is a dodgy internet translation so it probably says ‘My dog is dead’ when it fact should say ‘There is nothing run-of-the-mill about it’. I shall be corrected.

Mushroom Pastries From The Hairy Bikers

I’m about half way through present wrapping and it’s doing my head in (As is the fact that I am waiting for some new blinds to turn up from John Lewis – they are now officially my most hated brand because they didn’t deliver on time and they don’t seem to know what they are doing; for those who know the John Lewis brand this might come as a surprise – for those that don’t; they’re overpriced and, thankfully for you, over here).

So to try and remain in a state of festive calm I reminded myself that the Hairy Bikers seem to be able to maintain an air of constant joviality no matter what. And so I delved between the covers of their book of pies and found this creation:
