Heatwave! Time for Herby Coconut Rice with Mango Plus Lots of Flesh

We have a heat wave coming this weekend in sunny Blighty. The Met Office recommends staying indoors (to avoid the sun), turning off non-essential electrical items (they generate heat) and closing the curtains.

What is causing this response (which sounds more like ‘what to do in the event of a nuclear holocaust’)? Temperatures of 30 centigrade (86 fahrenheit). I mean it’s not exactly catastrophic levels is it?

I remember we took the kids to the south of France one year. As we got off the plane we were blasted by a wave of heat. The youngest turned to me and said ‘Dad, is that the engine?’ to which I replied ‘No son, that’s just hot’. We sweltered for four days. Could hardly move it was so hot.

So with that experience in mind I may well say ‘balls to the ‘Elf & Safety’ brigade and ‘chuck another prawn on the barbie’. With some rice.


Levi Roots (a Caribbean chef who has made a packet off the back of an appearance on ‘Dragons’ Den’) created a twist on traditional rice and peas.

Herby Coconut Rice with Mango

  • Can of coconut milk
  • 11 oz rice
  • Can of red kidney beans
  • Handful of dried mango
  • 2 red chillies
  • 3 ½ fluid oz olive oil
  • 2 tbsp cider vinegar
  • ½ tsp sugar
  • 1 red onion
  • Handful cashew nuts
  • 2 tbsp chives
  • 2 tbsp coriander
  • 1 lime, juiced

Put the coconut milk in a pan and then add about ¾ of a can of water. Add the rice to the pan  with the beans, mango and whole chillies.


Yes those are pine nuts but they never made it to the final version….

Cover the pan and bring to the boil. Lower the heat and simmer for 15 mins. Turn off the heat and leave covered for 5 mins. These are the instructions. The reality is more like simmer for 10 mins and leave uncovered otherwise the rice will get too soft and starchy.


Make the dressing by combining the oil, vinegar, sugar, onion and salt.


Put your glasses on lad!

Chop up the herbs:


How’s the rice doing? It should look a little like something like this…


Put the rice in a big bowl, remove the chilli and chop it up:


Add the chilli and the herbs and the nuts to the rice. Pour over the dressing and combine:


Squeeze the juice of a lime onto the rice:


Spread the rice onto a platter:


Now serve with meat and fish. You could try a massive (and I do mean massive) fillet steak:


Or you could serve with some salmon and mega-prawns:


For those who hate rice and peas there’s always burgers and hot dogs:


Or of course there’s always sliced sirloin for the connoisseur….


Whatever you do this weekend enjoy the heat….while it lasts!

  1. Wow, you pretty much covered something for everyone in this meal. I love all of it but have to say that is a very nice chunk of meat I’m staring at.
    We’ve had weeks now in the 90’s which is bad enough but the humidity makes it feels like you’re trying to suck air through a wet towel. I swear when I step in the shower, steam comes off the top of my head. Of course I’m the fool who when we built our house & the builder said “Are you sure you don’t want us to plumb for central air while the walls are open?”…yes, I’m the fool who said “In New England…nah”.

  2. 86? Where I’m from the temp can go as high as 115! Although, if I had to live where you do during the winter, I would freeze to death. Anything lower than 75, I’m cold! 😉

    • 115 – we’d be dessicated, husk-like zombies over here. And we are just as good at not dealing with the cold either. Something to do with living on an island I suspect.

  3. Your assistants look like a big help. The rice dish looks delicious, but the proteins – all of them – look outstanding. In the US the enormous prawns would be called “Jumbo Shrimp”! An oxymoron or what?

  4. Well at least you have the sea air to cool you off a bit, she said jealously. Here in the town it’s a different story! but yes I will close the curtains but I’m turning on both fans. I agree it’s a good idea to shut the computers etc. down for a break and I’m glad I’m not on the tennis court.
    Now to the food…it all looks wonderful as usual. I especially like the first recipe with the prawns and steak and mango (my favourite). I would love all that. The hot dogs and burgers look scrumptious too. You always put on such a feast for the eyes.

    • Thanks I love to pile it up and it all has to get eaten. I did that rice with fresh mango first and then the next time with dried – its better because it doesnt go mushy

  5. I think our kids would get along! “Dogs” and Burgers for them. Kudos to you for letting them help cook. It takes a little more patience than I have some days.
    And I have to laugh at the temperature since we used to live in Southern Florida where it was always in the 80’s. But then again when it got down to 60 degrees, folks started wearing parkas and winter hats and said they were “freezing”.

    • Oh we are good at the cold too. In the office it’s either too hot or too cold. The best bit is when they test the fire alrms every Tuesday the air con automatically switches off and then takes two days to get back up to speed so we all swelter. Stupid office.

    Yeah 30 is not much of a heat wave…it hit 42 on our deck last week…too hot to even sit out there! My chihuahua loved it though…I think it’s the Mexican in him 😛

  7. Enjoy your hot weekend! I agree, 30 C is hot, but not hot enough to induce panic, in my humble opinion at least! You will be very well prepared with this delicious rice; I bet it’s good cold too (assuming any is left).
