Mediterranean Fish Stew with Garlic Ciabatta

New Le Creuset soup bowls. With lids! A gift from the wife for my birthday back in June. Had to try them out.

We decided on a fishy creation rather than standard soup and went for a tomatoey base rather than creamy. And (shock, gasp) this dish is actually quite healthy!

For the stew:

  • 3 or 4 tilapia fillets (ideal for those who don’t like strong fishiness)
  • 500 g’s of big fat uncooked prawns
  • 6 to 8 large ripe tomatoes
  • 1 red chilli
  • the zest of one orange
  • a couple of tablespoons of tomato paste
  • a glass of white wine (obviously)
  • 3/4 pint of fish stock
  • a couple of cloves of chopped up garlic
  • 1 onion diced
  • herbs – eg sage, thyme, basil, parsley

For the toasts

  • 1 ciabatta cut into slices
  • olive oil
  • garlic clove

First off prepare the toast – drizzle olive oil over the bread slices and cook on a griddle or under a grill:

Then rub a cut clove of garlic over the toast:

Put the toast aside and start on the stew.

First fry the onion, garlic and chilli in some olive oil

Then add the chopped tomatoes and continue cooking, adding the paste as you go:

Add the herbs and wine and simmer until most of the liquid has gone:

Now add the stock and the orange peel and continue to simmer:

Add the fish and prawns and cook for 10 minutes:

Finally add some chopped parsley and it’s ready to serve!

Those bowls are the business – and of course its more or less essential that this baby is served with a nice glass of ice cold white wine!

  1. I suffer from a serious “dish addiction”. I love little pots and colorful plates. The soup looks delicious. Unfortunately it’s 104 degrees outside here so not exactly the weather for it but I’ll tuck it away for when it is.

      • I had friends back in my thirties that lived in Bodega Bay a beautiful California beach community. He a lawyer, she an interior designer and an amazing chef. Her kitchen was my dream. A huge center island with two banks of gas burners, an indoor grill, two industrial sized refrigerators one with glass doors, and the cupboard space, ooh, la, la. I’m rarely envious, but that kitchen turned me vibrant emerald green. 🙂

        • My ultimate wish, the thing that I would give it all up for, is to sit in a kitchen – my kitchen – with a centre island – with pots and pans hanging from hooks. Its all I need. That and an American fridge with two doors. We have those over here but few have the space to put them anywhere!

  3. You shouldn’t have said anything about the healthy part but this looks awesome. Very cute bowls too.
    So why did you guys pull the plug on Springsteen? What’s wrong w/a little noise – don’t those neighbors appreciate that they got a free concert?

    • Oh no they hate it. And its not the first time Macca has had the plug pulled on him (I think he was playing with The Boss when that happened) Back during Live Aid he played the whole of Hey Jude (I think it was that one) without a mike and no one could hear a thing – not that anyone minded…
