Mississippi Mud Pie

How do you top a Chocolate Torte? You forget about aesthetics and just focus on what is important – chocolate. Yes chocolate matters. It really does. As does cream and butter. All the good stuff. And then you take it to work and put it into a baking competition! Yes thats right this baby went in for a competition – but how did it do? (answer at the end).

90%? How dark can chocolate get?!

To create Mississippi Mud Pie (try spelling that after 3 glasses of wine) – you need (taken from the BBC Food website):


  •         One and a half packets of bourbon biscuits, crushed
  •         75g butter, melted


  •         85g dark chocolate
  •         85g butter
  •          2 eggs
  •          85g brown sugar
  •          100ml double (heavy) cream

Fudge sauce

  • 150g dark chocolate
  • 150ml double cream
  • 3 tbsp golden syrup
  • 175g icing sugar


Pour a big glass of wine and eat a piece of chocolate too if you like. Then:

Mix the biscuits and butter together in a bowl. Press the mixture into a tin. Chill in the fridge.

Crush those little devils up good

For the filling, melt the chocolate and butter together in a heatproof bowl set over a pan of simmering water.

Whisk the eggs and sugar together. Fold in the cream and chocolate mixture. Pour into the tin and bake in the oven for 40-50 minutes. Cool (Have another wine to slow things down).

Good enough to eat? No! Its not cooked yet…

Now its cooked but leave it alone we still need some sauce

For the fudge sauce, heat all of the fudge sauce ingredients in a saucepan until the mixture is smooth and glossy. Allow to cool a bit but don’t let it set.


…and after. Its chocolate, but without the tedious chewing.

Spread the sauce over the cooled pie and chill in the fridge for 20 minutes.

Cover in shavings of chocolate (I mean you can’t have too much chocolate, right?)

We came fourth out of thirteen entries at the office bake off. Who won? Can you believe it – a chocolate torte! But don’t worry it wasn’t as good as Happiness Stan’s! (You’ll have to trust me on that).
