Thai Curry for Cheats

Chinese curry is all well and good. But what if you want something a little bit spicier? Something that gets down and dirty with the Far East? Green Thai curry could be the solution, but you’ll need some wine to get you through it. Essential ingredients pictured below:

Ingredients for Green Thai Curry (for Pescetarians):

  • 2 tablespoons of Green Thai Curry Paste (more if you are insane)
  • 1 Onion
  • 1 Red and 1 Green Pepper (Bell, Capsicum depending where you come from)
  • 1 Portobello Mushroom
  • Can of Coconut Milk
  • 1 tablespoon palm sugar
  • Packet of raw tiger prawns
  • Handful of chopped fresh coriander
  • Dash of Fish Sauce
  • Oil
  • Rice

You could try and make your own Thai curry paste. But you’d need another hour to do it. Good luck – I went down to the local Wing Yip and got myself a ready-made pot!


Grab the wine. Depending on how much Thai curry paste you put in this concoction you might well need it. Fry the paste in some oil for a minute, then add the onions and peppers and carry on frying for a couple of minutes until things start to soften up; add the mushrooms:

Stir fry for a bit (Did I mention you need to get the wok out?). Then add the coconut milk:

Continue to cook, boiling down the milk, then add the prawns. Put the rice on to boil in a big pan of salted water. After 10 mins or so (the curry should be thickening up a bit) add some cane sugar (the magic ingredient) and some fish sauce:

While this is all going on you need to get some coriander ready, Jamie Oliver’s knife thing to the rescue once again:

Add the chopped up coriander to the curry and then its time to serve this bad boy up. Pack some rice into a small buttered pudding bowl or some such to get a mold of rice as shown below:
